A sommelier, (pronounced /ˌsəməlˈyā/) or commonly referred to as a wine steward, is a trained wine professional, who normally works in fine restaurants and specializes in all aspects of wine service, including food pairing. Unlike a wine waiter, this role is far more specialized. Last month, we were invited to a lesson with newly certified sommelier, Sean Raymond, on how to match wines with desserts.
