Nothing ushers in a summer fiesta better than finger foods of the Latino persuasion. Borrowed from the Tasty Kitchen, this Mango Chicken Quesadilla is quick and easy to make; and a guaranteed delicious lasso to keep guests coming back for more. Now, bring on the tequila!

Ingredients.↓

  • 2 tablespoons olive oil
  • 6 whole chicken tenders or 2 chicken breasts sliced into three sections
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 1 whole onion, sliced thin
  • 4 whole flour tortillas
  • 1 cup Queso Quesadilla or melting cheese of your choice
  • 1 whole mango, peeled and sliced in thin wedges
  • ½ cups chopped cilantro

Directions.↓

In a large skillet over medium heat add olive oil. Sprinkle chicken with salt and pepper. Add chicken to the pan. Brown chicken on each side for about 3 minutes per side, until cooked through and juices run clear. Remove chicken from pan, set aside.

Add onion to the pan, stir the onion around to remove the crispy chicken bits from the bottom of the pan and cook over medium heat for another 3 minutes. Remove onions from pan and set aside. Slice chicken.

Place a tortilla in the same skillet and heat it over medium heat until heated through, flipping once. To one side of a tortilla add cheese, sliced chicken, mango, onions and cilantro. Fold the other half of the tortilla over (think omelette) and press the sides together with a spatula, lower heat and allow cheese to melt. Place on cutting board and cut into wedges. Repeat with remaining tortillas and filling ingredients.
